(Makes about 4 large servings)
1/2 cup chia seeds
1 can (13.5 oz) full fat coconut milk
Splash of almond milk
1 tsp vanilla
3-5 tbsp maple syrup (depending on how sweet you’d like it)
Pinch of salt
Combine all ingredients in a medium sized bowl and whisk for about 30 seconds. Cover and place in fridge for a minimum of one hour, and up to 5 days. When ready to eat, stir well and top with whatever your heart desires. I used walnuts, blueberries, raspberries and almond butter
